3 Cucumbers Total for both recipes (striped, cut into round pieces, then cored out.)
Tuna Cups
1 whole and 1 half of a cucumber
1 can of low sodium albacore tuna in water
1 red onion
1 celery stalk
Paprika
Organic-(optional) Mayo
1 teaspoon of dijon mustard
Fresh dill
1 teaspoon of capers (optional)
Mix all ingredients together. Sprinkle 1/2 teaspoon of sea salt on cucumbers then scoop mixed ingredients into 1 and a half cucumbers with capers.
Veggie Cups
2 loose Carrots finely chopped
1 cup of finely chopped fresh spinach
1 Red Pepper finely chopped
1 Red Onion finely chopped
Mix together all of the chopped veggies in one bowl.
In a separate bowl mix together homemade dressing:
1/4 Cup of Organic Olive Oil
2 tablespoons of Balsamic Vinegar
1 capful of Organic Apple Cider Vinegar
1/2 teaspoon of sea salt
1/2 teaspoon of black pepper
Whisk together. And drizzle over fresh veggie mixture.
Sprinkle 1/2 teaspoon of sea salt on cucumbers then scoop mixed ingredients into 1 and a half cucumbers.
